But, have you tried it in your deviled eggs, soups, casseroles and stews, or as a lower-fat alternative to red meats and fish in your favorite recipes? This gem of a product, with bone, fat and gristle removed, can be had in chunk or shredded form in a choice of white, dark, or white-and-dark meat, and is packed in broth, water or sauce. It's also available in low-salt form. If you don't use all the contents of'a can, refrigerate the remainder and use it within two days. If possible, do not leave chicken dishes at room tempera- ture, but if you must, they should stand no more than two hours. And, reheat cooked leftover dishes thoroughly. Chicken is a delicate protein which becomes even more delicate when processed. So, if appearance is important, add it last in mixed dishes and gently toss or stir it in. Here now is an elegant-looking goodie that need not be reserved for company. These baked, puffy ravioli Iook-alikes are actually quite simple to make -- don't let the length of the recipe intimidate you. Other convenience ingredients contribute to the easy preparation: frozen puff pastry, packaged sauce mix and canned mushrooms. The puffs may be made in advance, refrigerated and reheated when you are ready. CURRIED CHICKEN PUFFS 1 (l.2-ounce) package curry sauce mix 1/3 cup milk 1 five-ounce can or 2 three-ounce cans boned chicken, drained 1 two-ounce can sliced mushrooms, drained and finely chopped 2 tablespoons finely chopped sweet red pepper 2 tablespoons finely chopped green onions with tops 1/2 of a 17.25-ounce package frozen puff pastry, thawed (two sheets) 1 egg, beaten In medium saucepan, cook sauce mix with milk, according to package directions. Stir in chicken, mushrooms, chopped pepper and onions until well combined. Set aside. On lightly floured surface, roll one sheet of pastry into 15x 15-inch square. Brush with some of the beaten egg. Cut rolled pastry in half. Place one half of the rolled pastry on baking sheet in three lengthwise rows of five each, about one inch apart. Top with remaining half sheet of rolled pastry. Press outside edges together to seal. Gently but firmly press pastry together in lines between dollops of mixture. Brush top with more of the beaten egg. Cut into squares at centers of pressed lines. Bake in preheated 375F. oven until puffed and golden brown, about 30 minutes. Repeat process with remaining sheet of pastry, curry mixture and beaten egg. If made ahead, reheat in preheated 375F. oven seven to eight minutes.
