ROAST LEG OF LAMB 5- to 7-pound leg of lamb !/4 cup Italian (fiat leaf) parsley, cut with scissors 2 teaspoons oregano I tablespoon ground black pepper Wipe leg of lamb with a well-moistened paper towel. Make several slashes in fat side, cutting down about 1/4 inch into meat. In small bowl, combine parsley, oregano and black pepper. Rub mixture well into top and sides of lamb. Place lamb, fat side up, on rack in open roasting pan. Insert meat ther- mometer so bulb is centered in thickest part but not resting in fat or bone. Do not add water. Do not cover. Roast in 325F. (slow) oven to desired degree of doneness. Allow 20 to 25 minutes per pound for rare; 25 to 30 minutes for medium; 30 to 35 minutes for well done. Remove roast from oven when meat thermometer registers 135F. for rare; 155F. for medium; 165F. for well done. Allow roast to "stand" 15 to 20 minutes in a warm place before carving. Roasts continue to rise approximately 5F. in temperature to reach 140F. for rare; 16OF. for medium; 170F. for well done. Note: Frozen lamb can be defrosted in the refrigerator or cooked frozen. If leg is cooked frozen, allow 113 to 1/2 more time (at 300F. to 325F) than for defrosted leg. About one hour before lamb is done, prepare potatoes as directed below. This should taka about 15 minutes. Then bake the potatoes as directed below while lamb continues to cook to your taste. ITALIAN--HER]BED POTATOES 4 medium baking potatoes 3 tablespoons Italian olive oil, divided 1/2 teaspoon rosemary leaves, crushed I/2 teaspoons oregano, crushed 1/2 teaspoon salt 1/s teaspoon ground black pepper Peel potatoes and cut in half lengthwise. Score cut surface of potatoes, carefully cutting l/s-inch deep slashes at t/2-inch intervals. Repeat with perpendicular slices to form a diamond pattern. Brush cut surfaces with about 1/2 tablespoon olive oil. Brush tablespoon oil on a shallow baking dish or jelly roll pan. Place potatoes, cut side down in prepared pan. Bake in 325F. oven 45 to 50 minutes. Meanwhile, crush rosemary leaves by measuring it out into the palm of one hand and press and rub with the thumb or heel of other hand. In a small bowl, place remaining oil, rosemary, oregano salt and pepper. Mix well; set aside. When potatoes have cooked 45 to 50 minutes and lamb is done, remove lamb from oven and keep warm. Set oven temperature at 350F. Remove potatoes from oven. With a spatula, carefully turn potatoes over. Brush cut surface with herb-oil mixture. Return potatoesto oven and continue baking, cut side up, 10 to 15 minutes or until tender. Makes eight servings.
